Tourist hotspots such London, York and Stratford-upon-Avon charge the highest prices for hotel accommodation, so in these areas it's often worth checking out alternatives such as the many excellent B&Bs that often boast high standards of food, accommodation & service.
Bed & Breakfast classification is covered by the same 1 to 5 star system used for hotels & campsites, described here by Visit Britain:
The 1-5 star rating system covers all kinds of accommodation from campsites, to B&Bs to city-centre hotelsand is administered by VisitEngland, VisitScotland, Visit Wales, Northern Ireland Tourist Board and the AA in Britain. Specific types of accommodation are assessed in a different way such that, for example, a hotel would need to offer room service to achieve a 3-star rating, but this would not be a requirement for a B&B.
Remember to check the classification – 4-star guest accommodation cannot be compared to a 4-star hotel. Different criteria apply.

1) Book hotels early - try contacting a hotel direct and they will often offer a deal to anyone able to pay a deposit on a room no matter how far in advance.
2) Book hotels very late - try one of the many hotel deal websites or contact hotels direct for late availability rooms that are often at hugely reduced prices.
3) Book hotels in unpopular areas - e.g. hotels in the financial centres of cities are often very quiet at the weekends despite being in quite good central locations.
